Carrie-Nell’s Oatmeal Cookies

3 cups quick-cooking oats
1 1/2 cups All-Purpose flour
2 eggs
1 cup shortening (gasp!)
1 cup white sugar
1 cup brown sugar
1 tsp. vanilla
dash of cinnamon

1.Combine oats, flour and cinnamon in separate bowl.
2. Cream sugar and shortening.
3. Add eggs and vanilla, mix.
4. Slowly add in oat/flour mixture until just incorporated.  Then use a spoon to completely smoosh it all together (technical term).  Too dense for my mixer.  🙂
5. Drop by small spoonfulls on baking sheet.  350 for 8 minutes or so.

Can add nuts and or raisins.
