Oven-Fried Chicken

Makes 8 Servings

1/4 c.marg.or butter, melted
1/3 c.all-purpose flour
3/4 tsp. salt, optional
1/2 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. ground black pepper
1 egg, beaten
1/4 c. milk
24 saltine crackers, finely crushed
3-3 1/2 lbs. chicken pieces

Preheat oven to 375F degrees. Place marg./butter in 15×10 1/2 x1-inch baking pan; set aside. Combine flour, salt, garlic powder, onion powder and black pepper. Combine egg and milk in a bowl. Roll chicken pieces in flour mixture, dip into egg mixture and roll in cracker crumbs. Plcae coated chicken in baking pan. Bake 30 minutes; turn. Bake an additional 25 to 30 minutes or until golden brown.
