Texas Caviar

This is one of our family favorites for parties and celebrations. It might be a nice addition to a New Year’s Party.

Texas Caviar

1 15 oz can black eyed peas, drained and rinsed

1 4 oz can chopped black olives

½ green bell pepper finely chopped

¼ red bell pepper finely chopped

4 scallions, finely chopped

2 garlic cloves, minced

¼ cup minced pickled jalapeno peppers

1 tsp ground cumin

1 tbl cider vinegar

¼ tsp salt

2 tbl olive oil

In a medium bowl, combine all ingredients. Stir to mix well. Cover and refrigerate about 2 hours, until ready to serve.

Serve with tortilla chips or hamburgers, grilled steaks or chicken.
