Nina’s Banana Chocolate Chip Bread

These amounts make 2 loaves of banana bread. I had to bake them for sufficiently longer than the suggested time but keep checking with the toothpick test to ascertain done-ness. 🙂


2 c. Sugar

…1 c. Shortening (Butter of Margarine), softened

4 Eggs

4 tsp.Vanilla extract

4 Bananas, mashed

4 c. All-Purpose Flour

2 tsp. Baking Soda

1 tsp. Salt

2 c. Chocolate Chips


1) In a mixing bowl, cream sugar and shortening. Beat in eggs, vanilla and bananas until                 throughly blended. Sift together flour, baking soda and salt; add to creamed mixture and stir     until just combined. 

2) Fold in chocolate chips. Spoon into greased 9″x5″x3″ loaf pans. Bake @ 350 F for 60-70             minutes, or until the bread tests done with a toothpick inserted into the center of loaf. Cool       in pan for 10 minutes before removing to a wire rack to cool completely.
