German Pancakes (Dutch Baby)

Hey, Chefs!  This is a fave of our family.  Easy, cheap, quick, comforting.  Top with maple syrup and/or peanutbutter, or sauteed apples.  YUMMY.  WAY faster than flipping pancakes for the whole fam.  Hope you like it.

GERMAN PANCAKES

6 eggs

1 c. milk (almond milk works GREAT)

…1 c. flour

cooking spray

Preheat oven to 425°.  Place a 9″x13″ pan OR 2 pie plates in the oven to warm.  Beat eggs; add flour and milk.  Spray hot pan(s) with cooking spray.*  Immediately pour in pancake batter.  Bake for 15-20 minutes until puffy & golden.  After you pull it from the oven, it will ‘deflate’.   Cut in serving-sized pieces and enjoy!

*If you heat your pans for too long, the spray will brown immediately – bleah.  So place the pan in the oven for just a couple of minutes.

(For a richer pancake, place 2-4 T. butter in the pan before placing it in the oven.  Before pouring in the batter, tilt pan to evenly coat with butter.)

(Another trick:  if you think you might like this pancake with apples, you can slice apples VERY thinly and place on the bottom of the pan(s) before pouring in the batter. OR saute them in a skillet with a couple of tablespoons of butter while the pancake bakes.)
