Cookies and Cream Cake

12 double stuffed Oreos (ok, you can use the regular kind too, but I prefer double stuffed)

1 package white cake mix

3/4 cup water

…1/2 cup sour cream

3 egg whites (save the yolks for breakfast tomorrow!)

2 tbs vegetable oil

Icing

6 Oreos

1 1/2 cups powdered sugar

1/4 cup sour cream

3 tbs butter or margarined, softened

Preheat oven to 325

spray bundt pan with non stick cooking spray

For cake, coursely chop cookies, set aside

combine cake mix, water, sour cream, egg whites, and veggie oil and mix according to cake mix package directions

pour half the batter into the pan

sprinkle chopped cookies evenly over the top of the batter, but try not to let them touch the sides of the pan too much

spoon remaining batter over the cookies

Bake 50-55 minutes

Cool in pan 10 minutes

loosen cake from sides and center of pan

invert onto cake plate or other serving device

cool completely (or try to get as close as you can)

For icing, coursely chop cookies, set aside

combine powdered sugar, sour cream, and butter, beat until smooth

ice top of cake, allowing icing to flow down the sides also

sprinkle top with chopped cookies

let stand until icing is set

store leftover cake, covered, in the fridge

serves about 16
