Chocolate Chip Peanut Butter Cookies

It’s highly recommended to double the recipe, but here it is in it’s original form.

1 1/2 c unbleached flour

…1/2 t baking soda

1/2 t salt

1/2 t ground cinnamon

3/4 cup butter softened

1/2 c sugar

1/2 c brown sugar

1/2 c peanut butter

1 egg

1 1/2 t vanilla

2 cups (12 oz) chocolate chips

1/2 to 3/4 chopped peanuts (this recipe is also amazing without these)

Preheat oven to 375

blend dry ingredients (flour, baking soda, salt, cinnamon), set aside

beat butter, sugars, and peanut butter until creamy

beat in egg and vanilla

gradually mix in flour mixture (don’t overmix)

stir in chocolate chips and nuts (if desired)

drop on ungreased cookie sheet

bake 8-10 minutes

edges should be set, center should be soft

let cool on the cookie sheet for 5 minutes before transfering to wire rack

This is also great as a bar, I put the mixture into a greased 9×13 pan and baked for about 23 minutes. PERFECTION.
