Taco Puffs

contributed by Laura Thompson

1 lb ground beef

1/2 cup chopped onion (optional, I didn’t use it because I didn’t have any)

1 envelope taco seasoning

…2 tubes large flaky biscuits (I highly recommend this exact kind…they were SO perfect for this recipe. Watch out for butter flavor!!! Ew.)

2 cups shredded cheese of your choice (I used cheddar and monterey jack)

brown beef and onion together till no longer pink, drain

add taco seasoning and prepare according to package directions, let cool slightly

GREASE a cookie sheet (I actually needed two) and flatten half the biscuits into about a 4 inch circle

spoon about 1/4 a cup of meat onto biscuit, top with cheese

flatten remaining biscuits, place on top, and pinch edges to seal (I had to do this a couple of times so it stayed together)

Bake at 400 for about 10-15 minutes or until golden brown–watch them closely. No one wants a burned taco puff. 😀

serve with sour cream, salsa, refried beans, or anything else you like with your tacos. I LOVED these suckers…they are fun to eat because you can pick them up like a sandwich, and they are easy to clean up. Enjoy!

Just made these. Yum! So easy and the kids loved them! I think next time, I’ll use hot taco seasoning to make them a little spicy.
